Veggie Tacos

Get ready for some of the best tacos ever. They have sweet potatoes, hearty black beans, taco mix, and rice.. oh and they are covered in cheese, drizzled with a cilantro lime sour cream and stuffed into a fried corn tortilla. Talk about a mouthful of delicious! These tacos are layered with flavors and textures that just can’t compare to a regular beef ground taco. Make these, make your mouth happy. Veggie Tacos 2 medium sweet potatoes, cubed 1/2 onion, chopped 1 can black beans, drained & rinsed 1/2 c rice, cooked 1 Pkg taco mix 1/2 c chicken broth Shredded cheese Corn tortillas Veggie or olive oil
1.
Put 2 tbsp of oil in a skillet over medium heat and cook potatoes until tender 10 minutes or so

Add onion, cook 5 more minutes

Add beans
4.
Add taco mix + chicken broth
5.
Bring to a boil and then turn it to a simmer, let simmer 5 minutes

Add cooked rice and mix
7.
Fry tortilla shells in medium heat with about 1 tbsp of oil each, it only takes about 30 seconds per side
8.
Assemble tacos, add the shredded cheese and then cilantro lime sour cream

CILANTRO LIME SOUR CREAM 2 cup chicken stock 1 1/2 cup heavy cream 4 tbsp butter S+P to taste 2 cup cheddar, shredded 1 cup quick grits

Cheesy Sheet Pan Asparagus

How about a delicious side dish. Y’all I love asparagus. This recipe is so easy. The perfect side dish to any meal. Low key, or fancy. And it’s extremely yummy.
Ingredients Directions
1 bunch of asparagus, trimmed 1 tbsp garlic, minced 1/4 tsp s+p 1/4 cup olive oil 1 cup mozzarella, shredded 1/4 cup parm, grated 1/4 cup panko
1.
Oven at 400˚

Trim your asparagus and put into a large mixing bowl

Add oil, S+P, garlic into bowl and mix
4.
Lay evenly onto a parchment line
baking sheet
5.
Pour leftover olive oil mix over asparagus
6.
Cook for 10 minutes
7.
Mix together mozzarella, parm and

breadcrumbs in a small bowl
8.
After 10 minutes remove asparagus and put
the cheese mix on
9.
Cook another 10 minutes

Bread Pudding

How about some Bread Pudding with caramel sauce! Omg, y’all this is probably the best dessert you’re gonna eat. I mean seriously, it’s that good. And it’s super easy. Make this! It’s a keeper! Oh and make sure to serve it with some vanilla ice cream straight out of the oven. Trust me, mouth explosion, moans, mind blown. It’s amazing.
Ingredients
BREAD PUDDING 1 loaf of apple cinnamon brioche bread (or something similar) 3 eggs 1 stick butter 3 cups whole milk 1 cup brown sugar 1/2 cup sugar 2 tsp vanilla

CARAMEL SAUCE 1/2 cup brown sugar 1 stick butter 1/2 cup heavy cream 2 tsp vanilla
Directions
1. Oven at 350˚ 2. Cut your loaf into slices, then shred pieces about
2” thick and put into large bowl 3. Melt butter and milk over medium heat in a sauce pan until butter is melted, let cool for 10 minutes 4. Pour milk and butter mixture over bread and let soak 5-10 minutes 5. In small bowl add eggs and vanilla, slightly beat your eggs 6. Add egg mixture and all sugars into bread bowl and mix 7. Pour into a greased baking dish 9×13 or larger
(mine was a little bigger) 8. Bake for 50 minutes 9. While that bakes make your caramel sauce. Mix all ingredients into a saucepan and bring to a low boil for 3 minutes, remove from heat and pour over bread pudding as soon as it comes out of the oven
